Labyrinth Cabernet Sauvignon feels like a classic Stellenbosch Cabernet — powerful yet polished, with a foot firmly rooted in granite-soiled terroir. From the moment you swirl the glass, it exudes blackberries, cassis and wild-berry bramble, streaked with violet and a faint suggestion of forest-floor or fynbos herbs. As it opens, cedar-wood and dark chocolate (or cocoa) notes emerge from oak maturation, but they never dominate — instead they wrap around the fruit, giving structure and complexity. On the palate, there’s density and weight, but also lift: dark-fruit richness supported by elegant tannins, balanced acidity, and a mineral backbone. The finish lingers in a dry, savoury mode — graphite-tinged, cedar-spiced, with a subtle earthy-herbal echo. It’s a Cabernet that delivers both power and finesse — drinkable now, but with enough backbone to reward a few years’ cellaring.

Simonsig “Labyrinth Cabernet Sauvignon” is primarily Cabernet Sauvignon (≈ 96–100%) with a small portion of Cabernet Franc (≈ 4%) in some vintages. The grapes come from vineyards planted on red-granite and shale soils in the Stellenbosch region. After harvest, the wine is fermented (typically 9–17 days on skins), then aged 12–18 months in French oak barrels before bottling.
