Simonsig Two’s Company brings together the best of two noble varieties—Cabernet Sauvignon and Shiraz—in a seamless blend that showcases both power and elegance. The structured tannins and deep blackcurrant notes of Cabernet Sauvignon are perfectly complemented by the vibrant spice and juicy plum flavors of Shiraz. Layers of blackberry, dark cherry, and subtle pepper intertwine with hints of vanilla and smoky oak, creating a wine that is rich, smooth, and immensely enjoyable. The grapes were picked at the optimal ripeness – between 23,5 and 25 balling. After being destemmed and grapes, the grapes were cold soaked for 2 days before fermentation took place between 8 and 14 days. Pumpovers took place approximately 3 to 4 times a day. A 5-10% portion was aged in barrel for 12 months. The wine was blended and lightly fined, with no fining taking place before bottling.
