This Merindol Syrah feels like a full-blooded expression of Stellenbosch terroir — granite-rich soils, dry Cape sun and carefully tended vines — all culminating in a wine that combines power and elegance. On the nose you get a swirl of ripe dark berries: blackcurrant, plum and sour cherry are the first to strike, followed by a subtle floral lift (violet or lavender), a touch of liquorice or clove spice, and a hint of cedar from oak ageing. As it opens, more complexity emerges: dark fruit melds with savoury leather, earthy undertones, and a gently smoky or tobacco-like depth. On the palate the wine delivers weight and structure — dense yet balanced fruit, fine-grained tannins that grip and then soften, and a freshness that keeps it lively rather than heavy. The finish lingers: fruit fades to dark chocolate, spice, cedar and a mineral, slightly peppery edge. It’s a wine that drinks beautifully now but also rewards a few years’ bottle age, gradually revealing more depth, nuance and balance.
Simonsig “Merindol Syrah” is 100 % Syrah, grown on deep red Hutton (weathered granite) soils in Stellenbosch. After destemming (with a small portion whole bunch), the grapes undergo a ~2-day cold maceration, followed by fermentation and ~22 days on the skins before pressing. The wine is matured in French oak barrels / barriques
