Inspired by the agile and enchanting Cape Fox that roams the Winelands, Simonsig Cape Fox Chardonnay captures the beauty and balance of its environment. This full-bodied yet approachable Chardonnay reveals a refined complexity, with bright citrus and butterscotch aromas leading into a rich palate of ripe apple, roasted almond, and delicate toasty French oak. With its silky texture and depth of flavor, this wine is both sophisticated and inviting, making it a versatile and rewarding choice for any occasion.
Only top-quality hand selected grapes were harvested at optimum ripeness according to their flavour profile. The juice was cold settled to brilliant clarity and inoculated with selected yeast strains to undergo fermentation in barrel. The fermentation temperature was kept below 15°C to ensure a nice, slow fermentation and optimal fruit flavour production. No malolactic fermentation took place, but occasional battonage was carried out.
