Glen Carlou Blanc de Blancs is a sparkling wine that highlights the elegance and precision of Paarl Chardonnay. The wine undergoes secondary fermentation in the bottle using the traditional method, with extended lees aging to develop richness and complexity. Aromas of lemon zest, green apple, and lightly baked brioche are mirrored on the palate, where vibrant acidity and a delicate mousse create a refreshing, creamy texture. The finish is long, clean, and crisp, making it ideal for celebrations or pairing with refined seafood and light appetizers. Grapes are carefully hand-harvested in the coolness of the morning to preserve the natural complexity and character of the fruit. In addition to climate and aspect, soil structure plays a crucial role in defining a region's terroir, which is a key feature of this single vineyard. The granite-based soil, enriched with pieces of quartz, yields grapes from our low- yielding and exceptional Chardonnay vineyard located on the northern foothills of the Simonsberg.
The light whole bunch pressing method, known as Méthode traditionnelle, was followed by two days of cold settling. To honor the terroir, no yeast was added during fermentation. After fermentation, the wine was aged on its fine lees for four months in concrete Nomblot egg-shaped tanks. Following bottling in the winter of 2021, the base wine remained in the bottle for over 40 months before undergoing a Zero Dosage disgorgement.
