| Food Pairing Guide | This refined, top-tier Cabernet Sauvignon deserves a special meal. It’s superb with prime cuts of beef, such as a chargrilled ribeye, fillet steak with a red wine jus or a classic roast rib of beef with Yorkshire puddings. Lamb is a natural match too, whether rack of lamb with a herb crust or slow-roast leg with rosemary and garlic. Its cassis and dark fruit work beautifully with venison loin and a blackcurrant sauce, or a rich beef and mushroom pie. For a slow-cooked option, try braised short ribs or beef bourguignon. Vegetarians could try a wild mushroom and truffle risotto or a mushroom Wellington. Finish with aged hard cheeses such as mature Cheddar, Comté or Parmigiano Reggiano. Decanting for an hour or two before serving will help it show its full complexity. |
Diemersdal The Journal Cabernet Sauvignon belongs to the estate’s top tier, The Journal range, which represents the ultimate expression of Diemersdal’s terroir. The name reflects the living, evolving record of six generations of the Louw family on the farm. The grapes come from the family’s unirrigated Durbanville vineyards, where cool Atlantic breezes and rich red soils produce Cabernet Sauvignon of real concentration and finesse. After around 22 months maturing in oak, sixth-generation winemaker Thys Louw tastes through the cellar and selects only the very best barrels for this wine.
In the glass it is deep and dark, with an intense nose of cassis and dark fruit, framed by well-integrated oak. The palate is elegant and refined, with layers of blackcurrant and dark berries held together by polished, fine-grained tannins and balancing freshness. It is a serious, beautifully crafted Cabernet with a long, layered finish. Decant it to serve with prime beef, lamb or venison, or cellar it to develop further over many years.
