| Food Pairing Guide | This full, tropical Sauvignon Blanc is at its best with bold, aromatic food. Try it with Thai green curry, Malaysian laksa, Vietnamese caramel pork or Indian-spiced prawns. Its ripe fruit also suits sweet heat, such as sticky chilli chicken or pineapple-glazed gammon. It goes very well with seafood: tuna ceviche with mango and lime, grilled langoustines, or crab cakes with a sweet chilli dip. Fresh goat’s cheese and creamy burrata are excellent with it. For a vegetarian match, try a butternut squash and coconut curry or a roasted vegetable tagine with apricots. It’s also a vivid, crowd-pleasing aperitif when well chilled. |
Diemersdal Winter Ferment Sauvignon Blanc is one of South Africa’s most original white wines, and it shows the Louw family’s restless experimentation with their signature grape. Owner-winemaker Thys Louw created it in pursuit of the most tropical Sauvignon Blanc possible. His method is unusual. After harvest, the juice is frozen at -20°C for around five months, then thawed and fermented in the middle of the Cape winter. The freezing roughly doubles the level of aromatic thiols compared with even a very tropical Sauvignon, and the result is a wine of remarkable intensity. It has been recognised in the FNB Sauvignon Blanc Top 10 and won the Sauvignon Blanc trophy at the National Young Wine Show.
In the glass it is exuberant and generous. Ripe grapefruit, passion fruit and pineapple fill the nose, with wider tropical and citrus notes behind them. The palate is rich and full, and lively, zesty acidity keeps it fresh and balanced. It ends on a satisfying savoury note. Louw calls it the most New World style of Sauvignon Blanc he has made. It’s a thrilling bottle for anyone who loves the variety’s tropical side, and a natural match for spicy, aromatic cooking.
