Finite Elements represents Catherine Marshall’s most focused expression of Pinot Noir—an interpretation of a specific site where soil, climate, and vine all align. Bright and vinous, the wine showcases a laser-like purity of red fruit, with vibrant cranberry and fresh cherry at its core. The palate is dry and finely textured, supported by taut, suede-like tannins that lend structure without heaviness. Elegant and precise, it’s a wine that balances energy with refinement, offering a graceful yet compelling Pinot experience that echoes the elegance of top Burgundy while remaining true to its South African roots.
Bunches were destemmed with 70% crushing after being hand sorted on a sorting table. The mash was cold soaked for 4 days to maximise colour extraction. Fermentation was in open top fermenters and spontaneously fermented. The skin cap was gently punched down daily into the juice to control heat distribution and tannin – flavour extraction. After primary fermentation (18 days average) was completed, the mash was pressed in a small stainless steel basket press. Secondary malo-lactic fermentation was completed in 300Li and 228Li French coopered casks.
