| Food Pairing Guide | This crisp, flinty Sauvignon Blanc is made for fresh seafood. It’s perfect with oysters, grilled prawns, mussels in white wine and garlic, or a plate of fish and chips with plenty of lemon. Its bright acidity cuts through dishes such as salt and pepper squid, crab cakes or salmon with a herb crust. It’s also a natural match for salads, from a classic Niçoise to a goat’s cheese and beetroot salad or a fresh herb and feta salad. Light chicken dishes work well too, such as lemon and thyme roast chicken or chicken Caesar. Vegetarians could try asparagus with a lemony dressing, pea and mint risotto or courgette fritters. It’s also refreshing on its own as an aperitif, well chilled. |
Vergelegen Wild Winds Sauvignon Blanc takes its name from the exposed, windswept slopes where it is grown. Vergelegen is one of South Africa’s most historic and celebrated estates, set at the foot of the Helderberg near Somerset West in Stellenbosch. The grapes for this wine come from its highest vineyards on the Schaapenberg, overlooking the wild Atlantic swells of False Bay. Strong sea winds sweep across these slopes, keeping the vines cool and giving the wine its freshness and saline character. The fruit is hand-picked over an extended harvest, and the result is a natural, genuine expression of Sauvignon Blanc and its coastal site.
In the glass it is bright and inviting. The nose has ripe guava and honeydew melon, followed by citrus zest and a light herbal lift, with a subtle flinty note that adds a coastal edge. The palate is crisp and mineral, with excellent acidity and fresh grapefruit flavours, and it finishes long and stylish. It’s delicious now with oysters, seafood or salads, but like many good Sauvignon Blancs it can also develop interestingly with a little time in the bottle.
Vergelegen (meaning “situated far away”) has over 300 years of history, but their philosophy is simple: "There must be harmony between the old and the new."
