| Food Pairing Guide | This Cabernet Sauvignon pairs beautifully with grilled ribeye steak, roast lamb and slow-cooked beef dishes, while its firm tannins and dark fruit profile also complement venison, mushroom dishes and mature cheeses such as aged Cheddar or Pecorino. |
Hartenberg Cabernet Sauvignon is a classic Stellenbosch expression with depth and structure. Aromas of blackcurrant, cassis and dark plum are layered with hints of cedar, tobacco, truffle and forest floor. The palate is full-bodied and richly textured, with concentrated dark fruit supported by firm, polished tannins and balanced acidity. French oak maturation adds complexity and spice, while the finish is long, savoury and built for ageing.
"This Cabernet offers up everything you`d hunt for in Bordeaux, yet this red is from South Africa`s Hartenberg. Deep black in colour with cigar box, pencil shavings and truffle overlaying the ripe, rich red and black fruit beneath. Judicious use of oak and good acidity provides an impressive structure which this pure fruit clings to, offering lingering, fine tannins on the finish."
Established in 1692, Hartenberg should need little introduction, as one of South Africa’s oldest wineries. By understanding and working with nature Hartenberg ensure that their wines are unique. Promoting biodiversity and soil health they have established a culture of regenerative farming, crafting wines through environmentally conscious and sustainable methods. This wine is made from 100% Cabernet Sauvignon grown in Stellenbosch. It is matured for around 18 months in French oak barrels, with a significant proportion of new oak, resulting in a full-bodied wine with concentrated black fruit, savoury complexity and excellent ageing potential.
Hartenberg follows regenerative and sustainable farming practices, is accredited under South Africa’s Integrated Production of Wine (IPW) scheme, and in 2025 became the first South African wine estate to achieve regenerative viticulture verification under the Ecological Outcome Verification framework.
Guided by a commitment to regenerative viticulture, the winemaking process focuses on purity and structure. Fermentation takes place in stainless steel tanks, where daily pump-overs ensure optimal extraction of colour and tannin. To develop complexity and a refined mouthfeel, the wine undergoes 18 months of maturation in French oak barrels. Finally, the wine is bottled without the use of fining agents, such as bentonite or albumin, preserving its natural character and integrity.
