Iona Elgin Highlands Fynbos Chardonnay is a refined expression of the Elgin terroir, meticulously crafted with a focus on purity and structure. Hand-picked grapes were chilled overnight and whole-bunch pressed without enzymes, enhancing the natural solids in the juice. The wine underwent wild fermentation in a selection of 228L and 300L French oak barrels (20% new), and was aged for 12 months on the lees, with 10% malolactic fermentation for added depth. No battonage was done, preserving a crisp, mineral profile. This Chardonnay reveals a layered bouquet of soft pear, stone fruit, and bright citrus, complemented by a mineral complexity. Its structured palate and ageing potential make it a wine of elegance and finesse, with a long, harmonious finish.
At 420m above sea-level, set high above the picturesque Elgin Valley Andrew Gunn founded Iona. It is here overlooking the Atlantic ocean that he has secured some of the coolest vineyards in the Cape.
In a country where cool climate vineyards are like gold dust, these vineyards are veritable nuggets. There is an extremely long growing season, allowing Andrew to create wines with complex flavours and a fresh, elegant style. The approach is hands off and the land is farmed according to organic and biodynamic practices with a particular focus on ensuring the health of the soils whilst pests are kept under control by the resident flock of geese that roam the vineyards.
