David Finlayson The Pepper Pot is a vivid, spice-driven expression of Rhône varietals from Stellenbosch, built to put their fresh, fruity, peppery character front and centre. Youthful purple-red in the glass, it opens with an enticing nose of crushed black pepper, dark mulberry and mixed berry coulis, leading into pure, clean dark red berry flavours on a smooth, well-structured palate.
The wine's complexity comes from its intricate winemaking: fruit from Malmesbury shale and deep red clay soils was fermented across 11 separate batches using a range of techniques, including partial whole-bunch inclusion and natural yeast fermentations, with maceration tailored to each batch to capture its best flavours. Soft pressing kept the fruit character front and centre, and after maturing for 10 months in second- and third-fill French oak barrels and large-format foudres, the wine was gently fined and filtered before bottling. The result is a Pepper Pot that's every bit as versatile as it is vibrant — pour it alongside a wood-fired pizza or a carpaccio and rocket salad and let the pepper and dark fruit do the talking.
