Cavalli Chardonnay is a complex, barrel-fermented white crafted from three separate morning pickings, each chosen to highlight a distinct terroir within the vineyard. Following whole-bunch pressing and a two-day settling period, each picking was fermented separately with its own yeast strain in 225L and 300L French oak barrels, before spending 10 months maturing in oak (30% new), with partial malolactic fermentation and extended lees ageing adding depth and texture. The result is a wine of real layered character, opening with aromas of lime blossom, flint, white stone fruit and yellow apple, joined by brioche and wood spice notes, all lifted by a vibrant, grapefruit-tinged acidity.
Harvested across three separate morning pickings to capture distinct vineyard terroirs, the grapes were whole-bunch pressed and fermented with picking-specific yeast strains in 225L and 300L French oak barrels. The wine spent 10 months maturing in oak (30% new), with partial malolactic fermentation and nine months of lees ageing building its layered complexity.
