The wine begins its life ageing under flor, gaining delicate savoury and yeasty notes, before further oxidative ageing deepens its complexity. Bottled en rama with minimal filtration, it retains exceptional character straight from the barrel. Aromas of toasted almonds, dried citrus peel, subtle leather and coastal salinity lead to a bone-dry, layered palate driven by bright acidity and a long, tangy finish. This wine reflects both craftsmanship and terroir, offering an elegant and authentic sherry experience that shines equally well on its own or with food.
Barbadillo Criadera Selection Amontillado En Rama N.V. is produced in Jerez, Andalucía and made from 100% Palomino Fino. It is a dry, fortified sherry aged through the traditional criaderas y solera system with both biological and oxidative influence, and bottled en rama to preserve purity. The alcohol level is typically around 17–19%.
This Amontillado pairs beautifully with jamón Ibérico, chorizo and other charcuterie, mature cheeses such as Manchego or aged Gouda, and grilled or smoked seafood including prawns, sardines and octopus. It also works surprisingly well with tricky vegetables like artichokes, mushrooms and asparagus, and is excellent alongside almonds, olives and a range of tapas. It is best served slightly chilled at around 12–14°C.
