Food Pairing Guide | Excellent enjoyed with meat dishes such as Beef Brisket or Kudu Carpaccio. Great match with cheese, such as Swiss cheese or white cheddar, or vegetables dishes like Green Bean Casserole or Ratatouille Tart. Also delicious served with venison, oxtail or osso buco, or malay curry. Neethlingshof Estate The Short Story Collection The Caracal Red Blend is an elegant yet full-bodied dry red wine which exhibits flavours of black plum, blackcurrant, sour cherry and liquorish. Well-structured with a long finish and firm tannins, an intricate fusion of aromas of sweet spice, cinnamon, cloves, dry coriander and dark fruit. Blended with 45% Cabernet Sauvignon, 24% Merlot. 14% Petit Versot, 9% Cabernet Franc, 8% Malbec. An ideal wine for any occasion that balances juicy fruit with complex spice and herbaceousness.
Rarely seen – the Caracal’s enigmatic presence is always felt. This beautiful cat known as the Rooikat (Red Cat), has moved back to the Neethlingshof estate. In an attempt to restore Neethlingshof’s natural biosphere, islands of Renosterveld have been re-established amongst the vines to offer these fine creatures place of shelter.

Neethlingshof has been following an active biodiversity orientated strategy in its farming practices. We are moving away from a mono culture of vines and in the process we are giving back to nature some of what we took from her in the past. We are actively promoting the return of the original Renosterveld in areas where vines used to grow. At the same time we leave islands of already growing indigenous plants or actively plant islands of new Renosterveld in the vineyards. Soil, climate and vines co-exist at Neethlingshof in perfect harmony. Our role in this relationship is to employ management practices that enhance this relationship and thus ensure top vine performance consistently from year to year. WWF’s Conservation Champions.
