Dandelion Vineyards Lionheart of the Barossa Shiraz is intense crimson with purple hues, this Shiraz brings bright and generous berry and plum fruit flavours to the palate, both ripe and savoury, and set against a refreshing backbone of acidity. Soft, mouth-coating tannins add to the generous mouthfeel of the wine, which ends in a clean, dry and plum fruit finish.
The Shiraz grapes were harvested in the last week of April. After the whole bunches were gently crushed, fermentation occurred naturally in open fermenters for eight days, with hand plunging twice daily. The must was then carefully basket-pressed into some new, but predominantly older, French oak barriques to complete fermentation. Following 18 months of maturation and racking in the same oak, the wine was bottled without filtration or fining.
