Biscardo Enigma Apassimento Sangiovese Rubicone is a big wine. Big on flavour and interest. There is no oak used in the winemaking process, so the tannins are soft and sweet and the wine is beautifully balanced. There is a richness and a palate of intense red and black berries which comes from the appassimento process of drying the grapes.
The Biscardo Family have been making wine from their base in Soave for over 150 years and are currently led by brothers Maurizio and Martino.
During the course of Maurizio's long and illustrious career, he has consulted for well known wineries around Italy and in doing so he came across the vineyards for their Puglian wines. Both the Pugliese and Veneto wines are characterised by an almost dangerous drinkability, aromatic purity and exceptional value for money.
The grapes are harvested in late autumn, by which time the grapes have shrivelled to raisins and are already partially dried on the vine.
The appassimento process means the grapes are left to dry in baskets until December after the manual harvest and selection. Air circulation keeps the grapes from growing mould. At the end of December, the maceration takes place very slowly at low temperatures and the wine is kept on lees until March.
