Doing its reputation as an aromatic grape justice, the inviting perfume of this Viognier is a fitting prelude for the myriad of flavours to follow on the palate. Pear, litchi, peach and melon are interspersed with savoury umami notes and a hint of oak spice intrigue. Although it is vibrant and satisfying to enjoy in its youth, this complex wine has the potential to develop honeyed richness and more tertiary flavours for up to 5 years in the bottle.
The Stellenbosch vineyards for this vibrant wine are situated at an altitude of 200m above sea-level and open to the fresh southwesterly summer breezes originating in False Bay. In close proximity to the sea, cooling breezes ensure excellent acidity to balance the bright fruit expression and create the foundation for a wine that is both aromatic and concentrated. Careful shoot thinning and crop control are performed throughout the growing season to ensure that ultra-premium, concentrated fruit can be harvested. Grapes are harvested in the cool early morning hours to preserve vitality and freshness.
Upon arrival at the cellar, grapes are quality sorted and then receive a gentle press. After a light settling, half of the juice is naturally fermented in older barrels and foudres. This component is left to mature for 3 months, producing a powerful wine that is especially vibrant and rich. The second half of the juice is fermented in stainless steel tanks to retain freshness and varietal vibrancy, characterized by its intrinsic aromatics layered with pear and subtle spice. These two different methods of vinification produce wines that are vastly different in style, yet complement each other beautifully when blended.
